    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    In a separate bowl, whisk the large eggs with granulated sugar until the mixture is pale and fluffy, about 4-5 minutes. You can use a hand whisk or an electric mixer.

    Combine Mixtures

    Once the chocolate mixture has cooled but is still liquid, fold it gently into the egg mixture until fully incorporated.

    In another bowl, whip the heavy cream to soft peaks. Be careful not to overwhip, as it should be smooth and creamy.
