    Prepare the vegetables

    Peel and cube the butternut squash into 1-inch pieces. Chop the onion, garlic, carrot, and celery into small pieces.

    Sauté the vegetables

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the onions become translucent.

    Add the butternut squash

    Add the cubed butternut squash to the pot and continue sautéing for 5 minutes.

    Add broth and spices

    Pour in the vegetable broth, then add the ground cumin, ground nutmeg, salt, and black pepper. Bring the mixture to a boil.

    Simmer

    Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the butternut squash is fork-tender.

    Blend the soup

    Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can transfer it to a blender in batches.

    Stir in coconut milk

    Return the blended soup to the pot (if using a blender) and stir in the coconut milk. Heat gently until warmed through.
