Braised Short Ribs

Prepare the Short Ribs
Preheat your oven to 325°F (160°C). Season the short ribs with salt and black pepper on all sides.

Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Add Broth and Herbs
Add the beef broth, thyme, and bay leaves to the pot. Stir to combine.

Braise the Short Ribs
Return the short ribs to the pot, ensuring they are submerged in the liquid. Cover with a lid and transfer to the preheated oven. Braise for about 3 hours, until the meat is tender and falling off the bone.

Rest the Ribs
Once done, remove from the oven and let the ribs rest for 10-15 minutes before serving.
