Vegetarian Linguine Ingredients

Method

Cooking Directions

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

  2. 2

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add zucchini, bell pepper, and cherry tomatoes. Cook for about 5-7 minutes until the vegetables are tender.

  3. 3

    Add Spinach and Herbs

Stir in the fresh spinach and chopped basil. Cook for an additional 2-3 minutes until the spinach wilts.

  4. 4

    Combine Pasta and Sauce

Add the cooked linguine to the skillet with the vegetables. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt and black pepper.

  5. 5

    Serve

Remove from heat and sprinkle with grated Parmesan cheese before serving. Enjoy your delicious Vegetarian Linguine!
