    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Bake the Potatoes

    Wash and dry the russet potatoes. Pierce each potato several times with a fork. Rub them with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

    Prepare the Filling

    Once baked, remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato inside the skins.

    Mix the Ingredients

    To the potato insides, add butter, sour cream, half of the cheddar cheese, bacon bits, chives, salt, black pepper, and paprika. Mash the mixture until well combined.

    Stuff the Potatoes

    Spoon the potato mixture back into the potato skins, packing them slightly.

    Add Cheese and Bake Again

    Sprinkle the remaining cheddar cheese on top of each stuffed potato. Place the potatoes back on a baking sheet and return to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
