Prepare the Steak

    Season the Steak

    Generously season the KC Strip steaks with salt and black pepper. Crush the pink peppercorns and press them onto both sides of the steaks to create a crust.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steaks to the hot skillet and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Remove from skillet and let rest.

Prepare the Mashed Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, smoked cheddar cheese, horseradish, salt, and black pepper to the potatoes. Mash until smooth and creamy.

Prepare the Demi Glace

    Make the Glace

    In a saucepan, melt butter over medium heat. Add chopped shallots and sauté until translucent. Stir in red wine and beef stock, and add thyme. Bring to a simmer and reduce until thickened, about 15-20 minutes. Season with salt and black pepper to taste.

Serve

    Plate the Dish

    Slice the rested steak and serve alongside the smoked cheddar horseradish mashed potatoes. Drizzle the demi glace over the steak and potatoes.
