    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and mushrooms. Sauté for about 5-7 minutes, or until the vegetables are soft and slightly caramelized. Season with salt and black pepper to taste.

    Prepare the Hoagie Buns

    While the vegetables are cooking, preheat your oven to 350°F (175°C). Slice the hoagie buns in half and place them on a baking sheet.

    Assemble the Sandwich

    Once the vegetables are ready, spoon them generously onto each half of the hoagie bun. Top with equal amounts of provolone, cheddar, and parmesan cheese.
