    Prepare the Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the liquid is absorbed and quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.

    Cook the Monk Fish

    Season the monk fish fillets with salt and black pepper. In a skillet, heat 2 tablespoons of butter over medium heat. Add the monk fish fillets and cook for about 4-5 minutes on each side, or until they are cooked through and golden brown. Remove from skillet and set aside.

    Make the Herb Butter Sauce

    In the same skillet, add the remaining 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in chopped parsley, dill, and lemon juice. Cook for an additional minute, then remove from heat.

    Serve

    Fluff the cooked quinoa with a fork and divide it among serving plates. Top with the monk fish fillets and drizzle the herb butter sauce over the top. Serve warm.
