Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry with paper towels. Set aside.

Make the Battering Mixture
In a large bowl, combine the all-purpose flour, cornmeal, cayenne pepper, salt, and black pepper. Mix well.

Dip in Buttermilk
Pour the buttermilk into another bowl. Dip each catfish fillet into the buttermilk, allowing excess to drip off.

Coat the Catfish
Dredge the buttermilk-coated fillets in the flour-cornmeal mixture until evenly coated.

Fry the Catfish
Carefully place the coated catfish fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the oil and place on a plate lined with paper towels to drain excess oil. Serve hot with hush puppies, tartar sauce, and your choice of potato.
