Prepare the Vegetables
Preheat the oven to 400°F (200°C). In a large bowl, toss the mixed seasonal vegetables with 1 tablespoon of olive oil, salt, and black pepper. Spread them out on a baking sheet and roast in the oven for about 20 minutes, or until tender and slightly charred.

Cook the Salmon
While the vegetables are roasting, heat the remaining olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon skin-side down and sear for about 4-5 minutes until golden brown. Carefully flip the fillets and transfer the skillet to the oven, baking for an additional 8-10 minutes, or until the salmon is cooked through.

Make the Garlic Butter Sauce
In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Remove from heat and stir in the chopped parsley and lemon juice.

Plate and Serve
On each plate, arrange a portion of the grilled seasonal vegetables. Place a seared salmon fillet on top and drizzle generously with the herbal garlic butter sauce. Serve immediately.
