Prepare the Steak
Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.

Season the Steak
Pat the steaks dry with paper towels. Rub both sides with olive oil, then generously season with kosher salt and freshly ground black pepper.

Cook the Steaks
Add the filet mignon to the hot pan. Sear for 4-5 minutes on the first side without moving it, until a golden brown crust forms.

Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130-135°F (54-57°C).

Rest the Steaks
Remove the steaks from the pan and let them rest for 5-10 minutes before slicing.

Slice and serve the filet mignon with your choice of sides.
