Cooking Instructions

  1. 1

    Prepare the Steak

Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.

  2. 2

    Season the Steak

Pat the steaks dry with paper towels. Rub both sides with olive oil, then generously season with kosher salt and freshly ground black pepper.

  3. 3

    Heat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until hot.

  4. 4

    Cook the Steaks

Add the filet mignon to the hot pan. Sear for 4-5 minutes on the first side without moving it, until a golden brown crust forms.

  5. 5

    Flip and Add Butter

Flip the steaks and add butter and rosemary (if using) to the pan. Cook for an additional 3-4 minutes, basting the steaks with the melted butter.

  6. 6

    Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130-135°F (54-57°C).

  7. 7

    Rest the Steaks

Remove the steaks from the pan and let them rest for 5-10 minutes before slicing.

  8. 8

    Serve

Slice and serve the filet mignon with your choice of sides.
