    Prepare the Marinade

    In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this marinade all over the lamb chops and let them marinate for at least 30 minutes.

    Roast the Potatoes

    Preheat the oven to 425°F (220°C). Cut the potatoes into wedges, toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 30-35 minutes until golden and crispy.

    Cook the Lamb Chops

    Heat a grill or grill pan over medium-high heat. Sear the lamb chops for about 4-5 minutes on each side for medium-rare, depending on thickness. Let them rest for 5 minutes before serving.

    Blanch the Broccolini

    Bring a pot of salted water to a boil. Add the broccolini and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

    Serve

    Plate the lamb chops alongside the roasted potatoes and broccolini. Add a spoonful of mint jelly on the side for dipping.
