Preparation of Chicken

    Marinate the Chicken

    In a bowl, mix olive oil, salt, and black pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.

    Prepare the Demi-Glace

    In a saucepan over medium heat, sauté chopped shallots and mushrooms in a little olive oil until softened. Add red wine and simmer until reduced by half. Season with salt and pepper.

Cooking the Chicken

    Broil the Chicken

    Preheat the broiler. Place the marinated chicken breasts on a broiler pan and broil for about 6-7 minutes per side or until cooked through and golden brown.

    Serve

    Remove the chicken from the broiler, let rest for a few minutes, and then serve topped with the shallot, red wine, and mushroom demi-glace.

Preparation of Roasted Potatoes

    Prepare the Potatoes

    Preheat oven to 400°F (200°C). Toss quartered potatoes with olive oil, garlic powder, paprika, salt, and pepper in a bowl.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer and roast for about 25-30 minutes or until golden and crispy, turning halfway through.
