Prepare the Medallions
Season the beef tenderloin medallions with salt and black pepper on both sides.

Sear the Medallions
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the medallions and sear for about 3-4 minutes on each side, or until they are browned and cooked to your desired doneness. Remove the medallions from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining tablespoon of butter and the green peppercorns. Sauté for about 1 minute, then add the beef broth. Bring to a simmer and reduce the liquid by half.

Finish the Sauce
Stir in the heavy cream and continue to simmer for an additional 5 minutes, until the sauce thickens. Return the medallions to the skillet to warm them in the sauce.

Serve
Plate the medallions on top of a bed of mashed potatoes and spoon the green peppercorn sauce over the top. Enjoy!
