Steak Preparation

Prepare the Steak
Season the Wagyu flank steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

Cook the Steak
Heat a grill pan or skillet over medium-high heat. Add 1 tablespoon of olive oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare. Adjust time based on desired doneness.

Rest the Steak
Remove the steak from the heat and let it rest for 5-10 minutes before slicing it thinly against the grain.

Wilt the Spinach
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the fresh spinach and a pinch of salt. Sauté until just wilted, about 2-3 minutes. Remove from heat and set aside.

Poach the Eggs
Fill a saucepan with water, add a splash of vinegar, and bring to a gentle simmer. Crack an egg into a small bowl and gently slide it into the simmering water. Repeat for the remaining eggs. Poach for about 3 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.
