Custard Preparation

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Combine Cream and Milk

    In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until it starts to steam, but do not let it boil.

    Mix Egg Yolks and Sugars

    In a large mixing bowl, whisk together the egg yolks, granulated sugar, and brown sugar until the mixture is smooth and pale.

    Add Cardamom and Vanilla

    Stir in the ground cardamom and vanilla extract into the egg mixture.

    Incorporate Cream Mixture

    Slowly pour the hot cream mixture into the egg mixture while whisking continuously to temper the eggs.

    Add Plum Puree

    Fold in the plum puree gently until well combined.

    Strain the Mixture

    Strain the custard mixture through a fine mesh sieve into a large measuring jug or bowl to remove any lumps.

    Prepare Ramekins

    Place 6 ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.

    Create a Water Bath

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

    Bake in the preheated oven for 30-35 minutes, or until the custards are just set but still slightly wobbly in the center.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.

Caramel Topping

    Prepare Brown Sugar Topping

    Once the custards are chilled, sprinkle an even layer of brown sugar on top of each custard.

    Caramelize the Sugar

    Using a kitchen torch, carefully caramelize the brown sugar until it forms a crispy top. If you don’t have a torch, you can place the ramekins under a broiler for 2-3 minutes, watching closely to prevent burning.

    Garnish with Plum Slices

    Garnish each crème brûlée with thin slices of fresh plum before serving.
