    Prepare the Bacon

    Place the slab bacon in a large bowl. Generously rub the black pepper all over the bacon to ensure an even coating. Chop the fresh herbs finely and sprinkle them over the bacon, pressing them into the meat. Cover the bowl with plastic wrap and refrigerate for at least 24 hours to allow the flavors to penetrate.

    Preheat your oven to 350°F (175°C). Remove the bacon from the refrigerator and let it come to room temperature. Place it on a baking sheet lined with parchment paper. Bake for 1 to 1.5 hours or until the internal temperature reaches 145°F (63°C). Let it cool before slicing.
