Shrimp Preparation

    Prepare the Poaching Liquid

    In a large pot, combine 4 cups of water, lemon slices, and Old Bay seasoning. Bring to a boil over medium-high heat.

    Poach the Shrimp

    Once the water is boiling, add the jumbo shrimp and reduce the heat to medium. Cook the shrimp for about 2-3 minutes or until they turn pink and opaque. Do not overcook.

    Cool the Shrimp

    Remove the shrimp from the pot and place them in a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes, then drain and set aside.

Cocktail Sauce Preparation

    Mix the Sauce

    In a medium bowl, combine 1 cup of ketchup, 2 tablespoons of horseradish, 1 tablespoon of lemon juice, 1 teaspoon of Worcestershire sauce, and 1 teaspoon of hot sauce. Stir well to combine until smooth.

Serving

    Plate the Shrimp

    On a serving platter, arrange the cooled shrimp over a bed of ice. Garnish with lemon wedges on the side.
