    Prepare the Balsamic Reduction

    In a medium saucepan, combine the balsamic vinegar, sliced strawberries, fresh lemon juice, chopped sage leaves, and honey or maple syrup. Bring the mixture to a boil over medium-high heat.

    Simmer the Mixture

    Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until the mixture thickens and reduces by half.

    Cool the Reduction

    Remove from heat and allow the balsamic reduction to cool completely. It will continue to thicken as it cools.

Coconut Cream

    Whip the Coconut Cream

    In a mixing bowl, combine the coconut cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until the mixture is light and fluffy, about 2-3 minutes.

    Set Aside

    Once whipped, cover the bowl with plastic wrap and set aside in the refrigerator until ready to serve.

Assembly

    Assemble the Drink

    In a tall glass, add a few tablespoons of the balsamic reduction at the bottom. Pour in the sparkling water or soda slowly to avoid too much fizz.

    Top the drink with a generous dollop of whipped coconut cream.
