Method

Cooking Pasta

  1. 1

    Boil the Pasta

In a large pot, bring water to a boil. Add a generous pinch of salt.

  2. 2

Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

Once cooked, reserve 1 cup of pasta water, then drain the pasta and set aside.

Preparing Vegetables

  1. 4

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat.

  2. 5

Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  3. 6

Add the bell peppers, zucchini, carrots, and broccoli to the skillet.

  4. 7

Sauté the vegetables for about 5-7 minutes until they are tender but still crisp.

  5. 8

Add the cherry tomatoes and sauté for an additional 2 minutes.

Combining Ingredients

  1. 9

    Toss Pasta and Veggies

Add the cooked pasta to the skillet with the sautéed vegetables.

  2. 10

Pour in some reserved pasta water to help the sauce coat the pasta evenly.

  3. 11

Sprinkle in salt, black pepper, and Parmesan cheese, tossing everything together until well combined.

Serving

  1. 12

    Finish and Serve

Remove from heat, add fresh basil, and toss again.

  2. 13

Serve immediately, garnished with additional Parmesan cheese if desired.
