Method
Preparation of Coconut Wash
- 1
Making Coconut Wash
In a blender, combine coconut cream and water. Blend until smooth and well combined. Strain the mixture through a fine mesh sieve or cheesecloth into a clean container, discarding any solid remnants. This will be your coconut wash.
- 2
Infusing Campari
In a separate container, combine the strained coconut wash with Campari. Let it sit for about 24 hours to infuse the coconut flavor into the Campari. After 24 hours, refrigerate the mixture and allow it to settle for a few hours.
- 3
Separating the Layers
Once settled, carefully skim off the top layer of the coconut-washed Campari, leaving behind any excess coconut solids at the bottom. This is your coconut washed Campari.
Mixing the Cocktail
- 4
Combine Ingredients
In a mixing glass filled with ice, pour in 1.5 oz of the coconut washed Campari, 1 oz of pineapple rum, and 1 oz of blanc vermouth.
- 5
Stirring
Stir the mixture gently for about 15-20 seconds until well-chilled and properly diluted.
- 6
Straining
Strain the mixture into a chilled rocks glass or coupe glass.
- 7
Garnishing
Twist the orange peel over the drink to release the oils, then drop it into the glass as a garnish. Optionally, place a pandan leaf as a decorative touch.
