Frittata Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Sauté Vegetables
In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet bell peppers and cook until they start to soften, about 3-4 minutes.

Mix Eggs
In a mixing bowl, whisk together the eggs with salt and black pepper until well combined.

Bake
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is set and a toothpick inserted comes out clean.
Pickled Onion Aioli Preparation

Mix Aioli
In a bowl, combine 1 cup of mayonnaise, ½ cup of pickled red onions, 2 minced garlic cloves, and 1 tablespoon of lemon juice. Stir until smooth.

Season
Add salt to taste and mix well. Set aside in the refrigerator until ready to serve.
Feta Green Olive Crumble Preparation

Combine Ingredients
In a small bowl, mix together 100 grams of crumbled feta cheese, 50 grams of chopped green olives, 1 tablespoon of olive oil, and 1 teaspoon of dried oregano.

Set Aside
Set the crumble aside for topping the frittata before serving.
