Cook the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10-12 minutes, stirring occasionally. Remove from skillet and set aside.

Cook the Mushrooms
In the same skillet, add another tablespoon of olive oil and sauté the sliced mushrooms until golden brown, about 5-7 minutes. Season with salt and pepper. Remove from heat and set aside.

Fold and Serve
Carefully fold the omelet in half and slide onto a plate. Keep warm while preparing the salad and potatoes.

Prepare the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, and diced cucumber.

Dress the Salad
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle over the salad and toss gently to combine.

If opting for toast, simply toast the slices of bread until golden brown.
