Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and prepare four ramekins by greasing them with butter and dusting with flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is pale and fluffy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.

  5. 5

    Add Dry Ingredients

Gently fold in the all-purpose flour, vanilla extract, and salt until just combined. Be careful not to overmix.

  6. 6

    Pour Batter into Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

  8. 8

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate and allow the lava cake to slide out.
