    Prepare the steak

    Season the Scholar's cut steak with salt and black pepper on both sides. Drizzle olive oil over the steak and let it marinate for at least 30 minutes at room temperature.

    Grill the steak

    Preheat the grill to high heat. Once hot, place the marinated steak on the grill. Grill for 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from grill and let it rest for 5 minutes before slicing.

Creamed VPF Kale

    Prepare the kale

    Wash the VPF kale thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.

    Cook the kale

    In a large skillet, heat a little olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the chopped kale and sauté until wilted, about 5 minutes.

    Make the cream sauce

    Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Confit Marble Potatoes

    Prepare the potatoes

    Preheat the oven to 150°C (300°F). Wash the marble potatoes and place them in a baking dish.

    Make the confit

    In a small saucepan, heat olive oil over low heat with smashed garlic and fresh thyme. Once hot, pour the oil over the potatoes in the baking dish. Season with salt to taste.

    Cook the potatoes

    Cover the baking dish with foil and place it in the oven. Cook for 1.5 to 2 hours until the potatoes are tender and infused with flavors.

Roasted Pearl Onions

    Prepare the onions

    Preheat the oven to 200°C (400°F). Peel the pearl onions and place them on a baking sheet.

    Roast the onions

    Drizzle olive oil over the onions, and season with salt and black pepper. Toss to coat. Roast in the oven for 20-25 minutes until golden brown and tender.

Scholar's Steak Sauce

    Prepare the sauce base

    In a saucepan, melt butter over medium heat. Add minced shallots and sauté until translucent.

    Combine ingredients

    Pour in the red wine and beef stock. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the sauce reduces and thickens. Stir in Worcestershire sauce, and season with salt and black pepper to taste.
