Method

Preparation of Aïoli

  1. 1

Make the Pickled Red Onion Aïoli

In a small bowl, combine the mayonnaise, pickled red onion, garlic powder, and lemon juice. Mix well until smooth. Set aside.

Cooking the Meat

  1. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Once done, remove from skillet and place on paper towels to drain excess fat.

  2. 3

    Cook the Sausage Patties

In the same skillet, add the sausage patties and cook for about 3-4 minutes per side, or until fully cooked. Remove and keep warm.

Scrambling the Eggs

  1. 4

    Scramble the Eggs

In a bowl, whisk together the eggs, salt, and black pepper. In the same skillet, melt the butter over medium-low heat. Add the egg mixture and gently stir with a spatula until the eggs are just set but still creamy, about 3-4 minutes. Add the American cheese on top and let it melt.

Toasting the Muffins and Assembling

  1. 5

    Toast the English Muffins

While the eggs are cooking, split the English muffins in half and toast them in a toaster or on a skillet until golden brown.

  2. 6

    Assemble the Sandwich

Spread a generous amount of the pickled red onion aïoli on the bottom half of each toasted English muffin. Layer with the scrambled eggs, a sausage patty, two strips of bacon, and the top half of the muffin.

Serving

  1. 7

    Serve with Crispy Potatoes

Serve the breakfast sandwiches warm alongside crispy potatoes.
