Coffee Spice Rub

    In a small bowl, mix together ground coffee, brown sugar, paprika, cayenne pepper, salt, and black pepper until well combined.

Bison Short Ribs

    Rub the coffee spice mixture all over the bison short ribs, ensuring they are evenly coated. Let it marinate for at least 1 hour or overnight in the refrigerator for enhanced flavor.

    In a large skillet, heat olive oil over medium-high heat. Add the marinated bison short ribs and sear on all sides until browned, about 3-4 minutes per side.
