Prepare the Coffee Spice Rub
In a small bowl, mix together ground coffee, brown sugar, paprika, cayenne pepper, salt, and black pepper until well combined.
Bison Short Ribs

Season the Ribs
Rub the coffee spice mixture all over the bison short ribs, ensuring they are evenly coated. Let it marinate for at least 1 hour or overnight in the refrigerator for enhanced flavor.

Sear the Ribs
In a large skillet, heat olive oil over medium-high heat. Add the marinated bison short ribs and sear on all sides until browned, about 3-4 minutes per side.

Braise the Ribs
Add the beef broth to the skillet, cover, and reduce the heat to low. Let the ribs braise for 2.5 to 3 hours, or until tender.
Crispy Potato Cake

Prepare the Potatoes
Peel and grate the russet potatoes. Rinse them in cold water to remove excess starch, then squeeze out as much moisture as possible using a clean kitchen towel.

Cook the Potato Cake
In a frying pan, melt butter over medium heat. Add the grated potatoes and press them down to form a cake. Cook for about 5-7 minutes until golden brown, then flip and cook the other side until crispy.

Season the potato cake with salt, black pepper, and garnish with fresh chives before serving.
Roasted Carrots

Prepare the Carrots
Preheat the oven to 400°F (200°C). Peel and trim the carrots, then cut them in half lengthwise.

Toss the carrots with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until tender and caramelized.
