Beet-Infused Gin

    Prepare Beets

    Wash and peel the beets, then cut them into small cubes.

    Infuse the Gin

    Place the beet cubes in a jar and pour the gin over them. Seal the jar and let it infuse in a cool, dark place for 3-5 days, shaking gently every day.

    Strain the Gin

    After the infusion period, strain the gin through a fine mesh sieve or cheesecloth to remove the beets. Store the infused gin in a clean bottle.

Salted Honey Syrup

    Combine Ingredients

    In a small saucepan, combine honey and water.

    Heat Mixture

    Heat the mixture over low heat, stirring until the honey is fully dissolved.

    Remove from heat and stir in the sea salt until fully incorporated. Allow to cool before using.

    In a cocktail shaker, combine 2 oz of the beet-infused gin, 1 oz of salted honey syrup, and 1 oz of fresh lemon juice.
