Cooking Instructions
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- 2
Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy and golden, about 4-5 minutes. Remove from heat.
- 3
Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
- 4
Combine Ingredients
Add the hot drained spaghetti to the skillet with pancetta. Quickly pour the egg mixture over the pasta, tossing vigorously to combine. The heat from the pasta will cook the eggs, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 5
Serve
Serve immediately, garnished with extra Parmesan cheese and black pepper to taste.
