Prepare the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Roast the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the zucchini and red bell pepper, and sauté for about 5-7 minutes, until they begin to soften. Stir in the minced garlic and spinach and cook for an additional 2-3 minutes until the spinach wilts.

Prepare the Sauce
Reduce the heat to low and pour in the heavy cream, stirring to combine. Add the grated parmesan cheese, salt, and black pepper. Cook for 3-4 minutes until the sauce thickens slightly.

Combine Everything
Add the cooked spaghetti to the sauce, tossing to coat. Gently fold in the cooked scallops and chopped fresh basil. Adjust seasoning if necessary.

Serve
Serve the Tuscan Bay hot, garnished with extra parmesan cheese and basil if desired.
