    Prepare the Mushrooms

    Clean the shiitake, cremini, and portobello mushrooms. Slice them thinly and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet. Sauté for about 8-10 minutes, stirring occasionally, until the mushrooms have released their moisture and are browned.

    Add Seasonings and Liquids

    Stir in the dried thyme, dried oregano, sherry wine, and vegetable broth. Bring the mixture to a simmer and cook for another 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

    Cook the Linguine

    While the ragu simmers, cook the linguine in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

    Combine and Serve

    Add the cooked linguine to the skillet with the mushroom ragu and toss to coat. Sprinkle with fresh parsley before serving.
