    Preheat your oven to 425°F (220°C). Pat the organic half chicken dry with paper towels and place it in a roasting pan.

    Drizzle the truffle oil over the chicken, ensuring it is well-coated. Season generously with salt, black pepper, and minced garlic. Rub the seasonings under the skin for better flavor.

    In a separate bowl, toss the diced carrots, parsnips, and halved marble potatoes with olive oil, fresh thyme, salt, and pepper.
