Gnocchi Preparation

    Make the Ricotta

    In a saucepan, combine whole milk, heavy cream, and salt. Heat over medium until it starts to simmer. Remove from heat and stir in lemon juice. Let it sit for 10 minutes to curdle.

    Strain the Ricotta

    Line a fine mesh sieve with cheesecloth and pour the curdled mixture into it. Let it drain for 30 minutes to remove excess whey.

    Make the Gnocchi Dough

    In a bowl, combine the drained ricotta, egg, and flour. Mix until a soft dough forms. If the dough is too sticky, add a bit more flour.

    Shape the Gnocchi

    On a floured surface, roll the dough into long ropes about 1/2 inch thick. Cut into 1-inch pieces and shape each piece with a fork.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
