    Prepare the Sauce

    In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Brown the Meat

    Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 7-10 minutes.

    Add Flavorings

    Stir in the minced garlic, tomato paste, dried oregano, salt, and black pepper. Cook for 2 minutes until fragrant.

    Deglaze with Wine

    Pour in the red wine and scrape any browned bits from the bottom of the skillet. Let it simmer for about 5 minutes until slightly reduced.

    Add Tomatoes and Broth

    Add the crushed tomatoes and beef broth to the skillet. Bring to a boil, then reduce the heat to low and let it simmer uncovered for 30-40 minutes, stirring occasionally.

    Cook the Pasta

    While the sauce is simmering, cook the pappardelle according to package instructions in salted boiling water. Drain and set aside.

    Combine and Serve

    Once the sauce has thickened, toss the cooked pappardelle with the sauce. Serve hot, topped with grated Parmesan cheese.
