    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into even sticks, about 1/4-inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This will help to remove excess starch and make the fries crispier.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Carefully add the dried potatoes to the hot oil in batches, frying for about 5-7 minutes or until golden brown. Remove the fries and drain them on paper towels.

    While the fries are still hot, sprinkle them with salt and black pepper to taste.
