    Prepare the Croquette Mixture

    In a mixing bowl, combine the shredded duck confit, mashed potatoes, green onions, minced garlic, 1 beaten egg, salt, and black pepper. Mix until well combined.

    Form the Croquettes

    Using your hands, take a portion of the mixture and form it into small oval-shaped balls or patties. Repeat until all the mixture is used.

    Bread the Croquettes

    Set up a breading station with one bowl containing the remaining beaten egg and another bowl with breadcrumbs. Dip each croquette first into the egg, then coat with breadcrumbs. Set aside on a plate.

    Fry the Croquettes

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add croquettes in batches and fry until golden brown on all sides, about 4-5 minutes per batch. Remove and drain on paper towels.

    Prepare the Crispy Parsley

    In a separate small pan, add about 1/4 cup of vegetable oil. Heat over medium heat, then add the chopped parsley. Fry for 1-2 minutes until crispy. Remove and drain on paper towels.

    Arrange the croquettes on a serving platter, garnish with crispy parsley, and serve with spicy aioli on the side.
