Prepare the Chicken
In a small bowl, mix together the ancho chili powder, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the seasoning blend. Rub the seasoning over both sides of the chicken breasts.

Cook the Chicken
Heat the olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until the chicken is cooked through and has a nice blackened crust. Remove from heat and let rest for a few minutes.

Prepare the Buns
While the chicken is resting, slice the brioche buns in half and toast them lightly in the same skillet until golden brown.

Assemble the Sandwich
On the bottom half of each toasted bun, spread 2 tablespoons of chipotle mayonnaise. Top with a piece of blackened chicken, a slice of cheddar cheese, lettuce, onion, tomato, pickle chips, and sliced avocado. Place the top half of the bun on the sandwich.
