Method

Cooking the Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add a generous amount of salt.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta water. Then drain the spaghetti and set aside.

Preparing the Sauce

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta and cook until it is crispy, about 5-7 minutes. Remove from heat.

    Whisk Eggs and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the cooked pancetta. Toss to combine and allow the pasta to absorb some of the pancetta fat.

    Add Egg Mixture

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Season

    Taste and adjust seasoning with salt and additional black pepper if necessary.

    Garnish and Serve

    Serve immediately, garnished with chopped fresh parsley and extra Parmesan if desired.
