Calamari Preparation

Prepare the Squid
Clean the fresh squid and cut it into rings, about 1/2 inch thick. Pat the squid dry with paper towels to remove excess moisture.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to create a uniform breading mixture.

Coat the Squid
Dip each squid ring into the beaten eggs, then dredge it in the breading mixture, ensuring it is well coated. Shake off any excess flour.

Fry the Calamari
Carefully add the coated squid rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain on paper towels.

Make the Sauce
Add the crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine all ingredients and bring to a simmer.

Simmer the Sauce
Reduce the heat and let the sauce simmer for about 15 minutes, stirring occasionally. This allows the flavors to meld together.

Once the sauce is ready, remove from heat and stir in the chopped fresh basil. Set aside for serving.
