    Wash and Cut Potatoes

    Thoroughly wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes if desired, then cut them into 1/4 inch thick strips.

    Soak the Potatoes

    Place the cut potato strips in a large bowl filled with cold water. Soak for at least 30 minutes to remove excess starch, which helps in achieving a crispy texture.

Frying

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature accurately.

    Dry the Potatoes

    After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.

    First Fry

    Carefully add the dried potato strips to the hot oil in batches. Fry for about 4-5 minutes, or until they are pale and soft. Use a slotted spoon to remove them and place them on paper towels to drain.

    Second Fry

    Increase the heat to high and return the fries to the hot oil in batches. Fry for an additional 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels again.

Seasoning

    Season the Fries

    Immediately sprinkle the hot fries with salt and any optional seasonings you like, such as paprika, garlic powder, or black pepper. Toss to coat evenly.
