    Boil the Eggs

    Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan and turn off the heat. Let the eggs sit for 12-15 minutes.

    Cool the Eggs

    After the eggs have finished cooking, transfer them to a bowl of ice water for about 5 minutes to cool down. This will make them easier to peel.

    Peel the Eggs

    Once the eggs are cool, gently tap them on a hard surface and peel off the shell. Rinse the peeled eggs under cold water to remove any shell fragments.

Filling Preparation

    Prepare the Filling

    Slice each egg in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika to the yolks. Mash the mixture with a fork until smooth and well combined.

    Add Chives

    Stir in the chopped chives to the yolk mixture until evenly distributed.

Assembly

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the hollowed-out egg whites.
