For the Calamari

Method

Preparing the Calamari

    Clean the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Prepare the Breading

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix until well combined.

    Soak in Buttermilk

    Pour the buttermilk into a separate bowl. Dip each calamari ring into the buttermilk, coating it thoroughly, then transfer to the flour mixture and coat well. Shake off any excess flour.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Spicy Marinara Sauce

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the Tomatoes and Spices

    Stir in the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Finish with Fresh Basil

    Stir in the chopped fresh basil just before serving.
