Main Ingredients
Method
Preparation
- 1
Prepare the Chicken
Start by preheating your oven to 375°F (190°C). While the oven is heating, take the chicken breasts and place them between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to about 1/2 inch thickness. Season both sides with salt and black pepper.
- 2
Set Up Breading Station
In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and breadcrumbs in the third. This will be your breading station.
Cooking
- 3
Bread the Chicken
First, dredge each chicken breast in the flour, shaking off any excess. Next, dip it in the beaten eggs, allowing any excess to drip off, and finally, coat it in the breadcrumbs, pressing gently to adhere.
- 4
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. You may need to do this in batches depending on the size of your skillet.
- 5
Assemble the Dish
Once the chicken is cooked, place the fried chicken breasts in a baking dish. Spoon marinara sauce over each piece, then sprinkle with mozzarella and Parmesan cheese.
- 6
Bake the Chicken Parmesan
Transfer the baking dish to the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.
Serving
- 7
Serve
Once baked, remove from the oven and let it sit for a few minutes. Serve hot, garnished with fresh basil if desired, alongside pasta or a side salad.
