Method

Preparation

  1. 1

    Rinse the Rice

Begin by rinsing the long-grain white rice under cold water in a fine-mesh strainer until the water runs clear. This helps to remove excess starch and prevents the rice from becoming gummy.

  2. 2

    Prepare the Vegetables

Dice the green and red bell peppers, onion, and mince the garlic. Set aside.

Cooking

  1. 3

    Sauté the Vegetables

In a medium saucepan, heat a tablespoon of oil over medium heat. Add the diced onion, bell peppers, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

  2. 4

    Combine Ingredients

Add the rinsed rice to the saucepan with the sautéed vegetables. Stir to combine.

  3. 5

    Add Liquids and Seasonings

Pour in the coconut milk and water. Add the salt, black pepper, allspice, and thyme. Stir well to combine all ingredients.

  4. 6

    Cook the Rice

Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let it simmer for about 18-20 minutes, or until the rice is tender and the liquid has been absorbed.

  5. 7

    Fluff and Serve

Once cooked, remove the saucepan from the heat. Let it sit covered for another 5 minutes. Fluff the rice with a fork, and stir in the chopped cilantro before serving.
