Preparation of Ingredients

    Soak the Black-eyed Peas

    Rinse the black-eyed peas under cold water. Place them in a bowl and cover with water. Let them soak for at least 4 hours or overnight if possible. Drain and set aside.

    Finely chop the onion, bell pepper, carrot, and celery. Mince the garlic cloves and set all the chopped vegetables aside.

Cooking the Dish

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
