Wash the fresh figs under cold water to remove any dirt. Pat them dry with a clean towel.

Prepare the Figs

Remove the stems from the figs and chop them into quarters. This will help them break down more easily during cooking.

Chop the Figs

In a medium-sized saucepan, combine the chopped figs, granulated sugar, lemon juice, vanilla extract, cinnamon, and a pinch of salt.

Combine Ingredients

Place the saucepan over medium heat. Stir the mixture occasionally until the sugar has dissolved and the figs have started to release their juices (about 5 minutes).

Cook the Mixture

Reduce the heat to low and let the mixture simmer for about 20 minutes, stirring occasionally, until it thickens to a spreadable consistency.

Simmer

Remove the saucepan from heat and let the fig spread cool to room temperature.

Cool the Spread

Transfer the cooled fig spread to a clean jar or airtight container. Store it in the refrigerator for up to two weeks.

Begin by juicing the fresh oranges. Cut each orange in half and use a juicer to extract the juice. You should have approximately 2 cups of orange juice.

In a saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved. Bring to a boil and then remove from heat. Allow the syrup to cool.

Making the Syrup

In a large pitcher, combine the orange juice, cooled syrup, and lemon juice. Stir well to mix all the ingredients together.

Chop the mint leaves roughly and add them to the pitcher. Stir gently to incorporate the mint into the mixture.

Adding Mint

To serve, fill glasses halfway with the orange mixture, then top with sparkling water. Stir gently and garnish with additional mint leaves if desired.

In a mixing bowl, combine the red gelatin powder with boiling water. Stir continuously until the gelatin is completely dissolved, about 2-3 minutes.
