Method

Preparation of Wings

  1. 1

    Prepare the Chicken Wings

Rinse the chicken wings under cold water and pat them dry with paper towels.

  2. 2

    Season the Wings

In a large bowl, combine chicken wings, olive oil, salt, black pepper, garlic powder, paprika, smoked paprika, and cayenne pepper. Toss until the wings are evenly coated with the seasonings.

Smoking the Wings

  1. 3

    Preheat the Smoker

Preheat your smoker to 225°F (107°C). If using wood chips, soak them in water for 30 minutes before adding to the smoker.

  2. 4

    Place Wings in Smoker

Arrange the seasoned wings on the smoker grates, making sure they are not crowded and have space for the smoke to circulate.

  3. 5

    Smoke the Wings

Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C) and the skin is crispy.

Optional Sauce Preparation

  1. 6

    Make the Hot Sauce

In a small saucepan over medium heat, combine hot sauce, butter, and honey. Stir until the butter has melted and the sauce is well mixed.

  2. 7

    Toss Wings in Sauce

Once the wings are done smoking, place them in a large bowl and pour the hot sauce over them. Toss to coat evenly.

Serving

  1. 8

    Serve the Wings

Transfer the smoked wings to a serving platter and enjoy immediately. Serve with celery sticks and blue cheese dressing if desired.
