Method

Preparing the Salmon

    Cook the Salmon

    Season the salmon fillets with salt and black pepper. Heat a skillet over medium heat and add a little oil. Cook the salmon for about 4-5 minutes on each side, or until it is cooked through and flakes easily with a fork. Remove from heat and let it rest.

Making the Smoked Tomato Aioli

    Combine Ingredients

    In a bowl, combine the mayonnaise, smoked paprika, minced garlic, tomato paste, lemon juice, salt, and black pepper. Mix well until all ingredients are combined and smooth. Adjust seasoning to taste.

Assembling the Sandwich

    Toast the Bread

    Lightly toast the brioche bread slices until they are golden brown.

    Layer Ingredients

    Spread a generous amount of smoked tomato aioli on one side of each toasted brioche slice. On two slices, layer the frisée lettuce, followed by the cooked salmon fillet, roasted red peppers, and pickled red onions. Top with the remaining slices of bread, aioli side down.

    Cut and Serve

    Cut the sandwiches in half if desired, and serve immediately with extra aioli on the side.
