Prepare the Chicken
Rub the chicken breasts with olive oil, then season with smoked paprika, garlic powder, onion powder, salt, and black pepper. Ensure that the chicken is evenly coated with the spices.

Smoke the Chicken
Preheat your smoker to 225°F (107°C). Add cherry wood chips to the smoker. Place the seasoned chicken breasts in the smoker and smoke for 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Prepare the Coleslaw
In a large bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, salt, and black pepper. Toss until the coleslaw is well coated and adjust seasoning to taste.

Assemble the Sandwiches
Take a brioche bun and add a generous portion of the pulled chicken on the bottom half. Top with a scoop of coleslaw and then place the top half of the bun over it. Repeat with the remaining buns.
