Marinating the Pork

    Prepare the Marinade

    In a mixing bowl, combine the minced garlic, soy sauce, honey, olive oil, Dijon mustard, black pepper, salt, and chopped thyme. Whisk until well blended.

    Marinate the Pork

    Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking the Pork and Vegetables

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Vegetables

    In a large bowl, combine the sliced carrots, bell peppers, and chopped onion. Drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.

    While the vegetables are roasting, remove the pork from the marinade and place it on a baking dish. Bake in the oven for 25-35 minutes, or until the internal temperature reaches 63°C (145°F). Let it rest for 5-10 minutes before slicing.

    Slice the pork tenderloin into medallions and serve alongside the roasted vegetables. Drizzle any remaining juices from the baking dish over the top for added flavor.
